Healthy Cabbage Salad Recipe

If you are looking for a healthy, crunchy salad to add into your lunch rotation, this is IT! It lasts well throughout the week and I like eating it hold OR cold. It’s easy to swap out the ingredients for what you have on hand in addition to what you prefer. The dressing is what makes this salad one I crave! Enjoy!

Salad Ingredients
shredded cabbage (green and purple)
shredded kale, broccoli and brussels sprouts
shredded carrots
green peppers
baby corn
snow peas
edamame, cooked and shelled
ground turkey, sautéed
toasted sesame seeds

Dressing Ingredients
¼ cup rice wine vinegar
3 Tbsp olive oil
1 tsp sesame oil
2 Tbsp soy sauce
1 Tbsp honey
salt + pepper
hot pepper sauce

Directions
1. Sauté cabbage, kale, brussels sprouts, broccoli, carrots until they are softened (~2 mins).
2. Add cabbage mixture into large bowl and mix in green peppers, baby corn, snow peas, edamame, sautéed turkey and any other veggies you like!
3. In a separate bowl make dressing by adding rice wine vinegar, olive oil, sesame oil, soy sauce, honey, salt + pepper and hot pepper sauce. Whisk together.
4. Pour dressing on top of cabbage mixture and mix together.
5. Enjoy!
