Simple & Delicious Meal Prep Idea: Yellow Curry Chicken

A warm and cozy meal prep favorite utilizing a mix of fresh and pre-made ingredients. Yellow Curry Chicken made in my Instant Pot, packed full of veggies and flavor!

Ingredients

1 jar Trader Joe’s Thai Style Yellow Curry

1 can coconut cream

2 chicken breasts

1 onion, diced

1 cup water

10 oz butternut squash

1/2 bag of carrots

4 yellow peppers, diced

2 cups fresh spinach, chopped

salt and pepper

Cilantro for garnish

Directions

  1. Preheat instant pot using sauté function. Sear chicken breasts until golden brown.

  2. Add diced onions and salt cook until browned.

  3. Add a small amount of Trader Joe’s sauce, scraping off browned bits from the bottom of pan.

  4. Add remaining sauce and water. Stir.

  5. Add butternut squash and carrots.

  6. Set Instant Pot to pressure cook for 30 minutes on high.

  7. Carefully release steam and open lid.

  8. Remove chicken breasts and shred. Return chicken to pot.

  9. Add in diced peppers, coconut cream and spinach, stir.

  10. Top with cilantro and ENJOY!!
