Honey Harissa Chicken with Roasted Veggies
A flavorful, slightly spicy meal with sweet notes from honey and caramelized veggies. Roasting everything together saves time and cleanup.

Ingredients:
Chicken breast
Harissa sauce (I used TJ’s jarred version)
Honey
Olive oil
Sweet potato
Cauliflower
Olive Oil
Distilled vinegar
Salt & pepper
Instructions:
Preheat oven to 400° F.
Mix harissa sauce, honey, and olive oil. Set aside.
Cut cauliflower and sweet potatoes into even pieces. Drizzle with olive oil and toss with honey harissa sauce.
Dice chicken breasts and a splash of distilled vinegar. Coat chicken breasts with remaining honey harissa sauce.
Roast chicken and veggies on parchment-lined sheet pans until cooked through.
Slice chicken and portion meals.
