Healthy Salad Recipe : Mandarin Orange + Cabbage

🍊This salad is a hit and will quickly become something you crave. The combo of mandarin oranges and fresh cabbage and crunchy ramen noodles makes this salad a favorite.

Salad Ingredients
1 bag of shredded kale, broccoli and brussels sprouts (Trader Joe’s Cruciferous Crunch is my fave)
1/2 cup shredded carrots
1 can of mandarin oranges, drained (save juice for salad dressing)
1 packet of ramen noodles (remove flavor packet)
toasted sesame seeds

Dressing Ingredients
¼ cup rice wine vinegar
2 Tbsp olive oil
1 tsp sesame oil
juice from jar of mandarin oranges
1 Tbsp soy sauce
salt + pepper

Directions
1. Add shredded cabbage into large bowl and mix in carrots and any other veggies you like!
3. In a separate bowl make dressing by adding rice wine vinegar, olive oil, sesame oil, soy sauce, juice from canned mandarins, salt + pepper to taste. Whisk together.
4. Pour dressing on top of cabbage mixture and stir together.
5. Break up uncooked ramen noodles into small, bite sized pieces and remove flavor packet (save this for another dish).
6. Sprinkle with sesames seeds and enjoy!
