Healthy Broccoli Cheddar Soup

Warm, hearty and healthy. Does a better combination exist? This is the perfect soup for the new year and a bit lighter than the traditional version. I used the Unexpected Cheddar from Trader Joe’s and I think it’s my favorite cheese! Haha!

Ingredients
3 Tbsp olive oil
1 onion, diced
1 head of celery, diced
6 large carrots, diced
1 bag riced cauliflower
1 head of garlic, minced
2 bags pre-cut, pre-washed broccoli florets (can also use frozen)
2 containers bone broth (or veggie stock) and water
1 block Unexpected Cheddar from Trader Joe’s, diced
salt and pepper to taste

Directions
1. Sauté mirepoix (celery, onions, carrots) and a sprinkle of salt in olive oil.
2. Add riced cauliflower and sauté until browned and softened.
3. Mix in garlic and stir until fragrant, being careful to not burn garlic :)
4. Stir in broccoli florets, followed by 1 container of bone broth. Re-fill bone broth container with water and stir in.
5. Blend using handheld blender, creating a mixture of small and large veggies.
6. Pour in remaining container of bone broth and water.
7. Gently add in cheddar cheese and stir until melted.
8. Salt and pepper to taste.
9. Voila! Enjoy! :)
