High Protein Cottage Cheese Bagels
1 cup all purpose flour
2 teaspoons baking powder
3/4 teaspoon kosher salt
1 cup cottage cheese
1 egg white, or 1 large egg (egg wash)
In a large bowl combine flour, baking powder and salt and mix well.
Add cottage cheese and mix with a fork or spatula until well combined and small crumbles form.
Keep dough in the bowl and using clean hands knead the dough until it comes together. It should be tacky, smooth but not too sticky. This will take ~ 2 minutes and the dough should not stick to your hand when you pull away.
Divide into small, equal balls. Poke a hole in the center and form into bagel shapes.
Brush egg wash on top and sprinkle with your favorite seasoning.
