No Bake Cookie Overnight Oats

No bake cookies were a favorite of mine growing up and this small batch recipe is perfect to take a trip down memory lane. Turning this favorite into overnight oats was simple and quick! I recommend making the no bake cookies (second recipe below) before making the overnight oats recipe (first recipe below). Excited for you to enjoy!

No Bake Cookie Overnight Oats Recipe

Ingredients
½ cup oats
1 tsp chia seeds
3/4 cup milk (water will work, too!)
1 tsp unsweetened cocoa powder
1 tsp peanut butter
drizzle of honey
1 crumbled no bake cookie (recipe below)

Directions
1. Pour oats into container, followed by chia seeds.
2. Into a blender cup add milk, cocoa powder, peanut butter and honey (sprinkle in a few oats, too). Blend.
3. Pour mixture on top of oats and chia seeds. Mix.
4. Crumble pre-made no bake cookie and sprinkle on top.
5. Close container and store overnight.
6. Enjoy!


No Bake Cookies Recipe

Ingredients
½ cup sugar
2 Tbsp milk of choice
¼ stick butter (or butter substitute to make it vegan)
1 Tbsp unsweetened cocoa powder
¼ cup peanut butter
¾ cup oats
splash of vanilla extract
pinch of kosher salt

Directions
1. Bring sugar, milk, butter and cocoa powder to a boil over medium heat. Let boil for 1 minute.
2. Remove from heat and mix in peanut butter, vanilla and salt. Stir.
3. Mix in oats and stir to combine.
4. Drop by spoonful onto baking sheet and refrigerate until cooled and hardened.
