Fresh Cranberry Relish

This cranberry relish is a family recipe and a personal favorite! It’s tart and fresh, with just a hint of sweet. Served cold it’s the perfect palette cleanse and can also be frozen (think, popsicles).

This recipe is from my grandfather by marriage- Robert H. Forbes. Bob was a veteran of both WW II & the Korean Conflict, having served as a Lt. Commander in the U.S Navy-Submarine Service. Bob was my step-grandfather and had a tough exterior, yet a kind, generous heart. He loved to garden and especially enjoyed growing tomatoes!

Ingredients:

2 12oz packages fresh cranberries
2 whole oranges
1 cup sugar
3 3oz packets orange jello
3 cups boiling water
1 cup cold water

Directions:

  1. Chop oranges and cranberries in food processor until pulverized.

  2. Mix in sugar. Set aside.

  3. In a separate container dissolve jello packets in boiling water and stir until dissolved.Add cold water and stir.

  4. Combine fruit mixture and mellow mixture, stirring slowly.

  5. Add mixture into serving dish and refrigerate overnight.

  6. Enjoy!
