Healthy Breakfast Idea: Baked Pears and Apples

A simple, healthy and delicious idea for breakfast. Baked fruit, sounds easy because it is! :) I used pears and apples to make this beauty come to life. It would be fun to add sides with this, too! I would enjoy eating this with a side of yogurt or oatmeal, dependent upon how warm it is outside.

Ingredients
Fruit Filling
-6-8 pears
-6-8 apples
-lemon zest
-lemon juice
-1 Tb of cornstarch
-4 Tb of brown sugar
-sprinkle of salt
-aromatic spices: cinnamon, nutmeg, ginger and cardamom
-nonstick spray

Topping
-1 cup of old fashioned oats
-¼ cup olive oil
-2 Tb honey

Instructions:
1. Pre-heat oven to 350* F.
2. Core and dice fruit. Medium dice is perfect, in my opinion. Add to a large mixing bowl.
3. Zest lemon and add lemon juice onto fruit mixture. Stir.
4. Add cornstarch, brown sugar, salt and spices. Stir.
5. Spray nonstick spray into baking dish and add a generous scoop of fruit into dish.
6. Bake for 25-30 minutes (or until fruit is fork tender).
7. Mix topping ingredients together; oats, olive oil and honey. Stir
8. Remove fruit from oven and add topping mixture. Return containers to oven.
9. Bake for 15-20 minutes (or until topping is toasted).
10. Cool and ENJOY!!
