Avoid Meal Prep Boredom — Part 2

Another idea to transform nearly the same ingredients into two separate meals, helping you avoid boring meal prep!

My Meal Prep Perspective :: By using the same base ingredients you can cut down on the complexity of preparing meals, increase flavor/variety and decrease the feeling of boring meals.

How you think about meal setup can help decrease a feeling of “boredom” and monotony when it comes to what you’ll eat during the week. By using the same base ingredients you can cut down on the complexity of preparing meals, increase flavor/variety and decrease the feeling of boring meals.

The versatile ingredients I used:

-peppers

-carrots

-butternut squash

-spinach

-cilantro

-jalapeño

And from there I created two completely different meals so that although the ingredients were the same, I created variety. Reminder — I used these two meals for Lunch (5days) and Dinner (5days) but they could easily be Meal 1: Lunch on Monday and Wednesday and Meal 2: Lunch on Tuesday and Thursday. Whatever works best for you!

Meal 1: Spicy Salsa Chorizo and Rice

-Soy Chorizo from TJs

-Spicy Salsa from TJs

-Ground Turkey

-Black Beans

-Kidney Beans

-Pinto Beans

-Butternut Squash

-Yellow Peppers

-Carrots

-Spinach

-Cilantro

-Jalapeño

-White Rice

Meal 2: Yellow Thai Chicken Soup and Rice

-Yellow Thai Sauce from TJs

-Coconut Cream

-Chicken Breast

-Butternut Squash

-Yellow Peppers

-Chickpeas

-White Beans

-Carrots

-Rice

What is incredible, in my opinion, is seeing the way different cultures make use of the same ingredients, as illustrated in these two meals!
