Healthy Dinner Idea: Cauliflower Tortilla Bowl
A new fave is on it’s way to your meal prep! This one can be modified with what you have on hand and easily becomes vegan by omitting the ground turkey. Simple, delicious, chef’s kiss! :)
Ingredients
1 pound ground turkey
1 large onion, diced
1 bag riced cauliflower
1 can diced tomatoes
6 tortillas
Spices to taste: salt, pepper, cumin
Fresh cilantro
Cooking oil spray
Directions
1. Preheat oven to 375°F and spray baking dish with cooking oil.
2. In large pan sauté ground turkey and diced onion. Season with salt, pepper and cumin. Sauté until browned.
3. Add riced cauliflower and sauté for about 4 minutes.
4. Add diced tomatoes and simmer for 5 minutes.
5. Remove cauliflower mixture from heat and allow to cool. Stir in fresh cilantro.
6. Spoon cauliflower mixture into a tortilla and place tortilla into a baking dish, shaping into a bowl.
7. Bake in oven for 12-15 minutes.
8. Remove from oven and ENJOY!!
