Meal Prep Versatility

Creating meals that are versatile is one way to avoid boring meals and meal prep monotony (and also an incredible way to save time)!

In this example, I took nearly the same ingredients and made two completely separate meals. For my main meal ingredients, I roasted tons of veggies (broccoli, carrots, celery, onions, garlic) and shredded rotisserie chicken. From there, I made separate meals by turning one into soup and the other into a BBQ bowl. I separated mine into lunch and dinner but this could also be lunch for the first half of the week and lunch for the rest of the week.

Meal one: Broccoli Cheese Soup
-broccoli, carrots, celery, onion and garlic blended together with bone broth, pepper jack cheese, rotisserie chicken, salt and pepper

Meal two: BBQ Bowl
-broccoli, carrots, celery, garlic, and rotisserie chicken with bbq sauce and a side of spicy rice

Versatile meals are just that — they create an opportunity to simplify and diversify. Cooking this way could also be done one day a week, and each day sauces/flavors/seasonings could be adjusted to make things even more diverse!

The possibilities are endless :)
